MAMA CARLA’S IL PESTO ALLA GENOVESE

INGREDIENTS:

Fresh Basil — 2 ½ to 3 cups small basil leaves

Garlic — 1 fresh garlic clove

Pine Nuts — 3 tablespoons

Olive Oil — ½ cup of olive oil

Parmesan Cheese — 6 tablespoons, grated

Salt — pinch of fresh fine sea salt

DIRECTIONS:

Combine pine nuts and garlic with 2 tablespoons olive oil and fresh basil with two teaspoons of parmigiana into the food processor. Grind and add more basil and parmigiana as needed with another 2 tablespoons of oil. Slowly stream in the rest of the olive oil. Season with a pinch of salt. Store in a jar and refrigerate until ready to use.

I Selvatici Winery vintner Giuseppe Sala, a fifth-generation wine maker and owner of his family-owned winery in Tuscany, arrived in Ponte Vedra for the North Florida leg of his U.S. Wine Fiesta Tour on Jan. 12, at the Westling home in Sawgrass.

“I am so excited and honored,” said Sala, “to introduce my family wines on my Wine Tour 2024 that is completely sold out with 33 wine dinners in 11 weeks from Florida to California.”

The last stop on the wine tour ends in California with friends Kurt Russell and Goldie Hawn in Bel Air to introduce the new 2019 Sangiovese di Toscana I.G.T. Super Tuscan wine. The Super Tuscan was everyone’s favorite and is available online at iselvatici.it.
