Casa Monica names executive chef

The Casa Monica Resort & Spa has announced the appointment of Rob DeGrassi as its executive chef.

DeGrassi is a New Jersey native who began his culinary journey when he was 14 years old, stretching out pizza dough and dreaming of running a restaurant.

He went on to earn his bachelor’s degree in culinary management at the Art Institute of Fort Lauderdale. 

He served as sous-chef with P.F. Chang’s and then joined the Omni at Amelia Island as the banquet chef. He later became the chef de cuisine at the oldest hotel or inn in America, the Omni Homestead Resort.

DeGrassi continued with the Omni New Haven at Yale as the executive chef. Returning to a historic hotel, he was the executive chef at the Cavalier Hotel, a Marriott Autograph hotel.

Most recently, he was the premium chef for the Jacksonville Jaguars, managing the owner’s suite and VIP events.

DeGrassi’s work with historic properties continues with this new position at the 1888 Casa Monica Resort & Spa.
DeGrassi is the father of four: Aiden, 9, Ryder, 7, Aria, 5, and Laurel, 2. He and his wife, Christina, enjoy the beaches of Florida and hanging out at home together.
